Bon Appétit Management Company (BAMCO) is an onsite restaurant company that provides café and catering services to colleges and universities, corporations, and specialty venues around the country. Bon Appétit started serving sustainable food at Lewis & Clark College in 1990. BAMCO prides itself on providing food service for a sustainable future which it defines as: flavorful food that is healthy and economically viable for all, produced through practices that respect farmers, workers, and animals; nourishes our communities; and replenishes our shared natural resources for future generations. BAMCO’s mission serves as the foundation for the many extensive sustainability initiatives the company has taken on over the past 25-plus years.
- Since 1999, all 500-plus BAMCO cafés around the country have been required to spend at least 20% of their food dollars on small, owner-operated farms within 150 miles of their kitchens.
- Chefs only serve seafood that has been rated green or yellow based on the Monterey Bay Aquarium’s Seafood Watch guidelines, cage-free shell eggs, and humanely raised ground beef.
- Chefs utilize snout-to-tail and just-in-time batch cooking techniques to prevent waste and prepare the most fresh and delicious food possible.
- Chefs educate students through farm trips, talks with farmers, and cooking classes with ingredients from the student garden.
- In 2007, BAMCO put itself on a “Low Carbon Diet” to reduce greenhouse gas emissions created by the highest-impact areas of the business company-wide by 25% over 3 years (www.eatlowcarbon.org).
- BAMCO partners with Urban Gleaners to donate leftover food from the café (that would otherwise go to waste) to people in need within the Portland community.
