  • Minimizes impacts to Portland's sewer collection and treatment system from fats, oil and grease (FOG) and other food waste
  • Shifts costs to the sources of FOG and food waste pollution and offers technical assistance and information to help Portland food service establishments meet requirements for reducing FOG and food waste discharges
  • Protects property, water quality, and public health

On January 1, 2012, the city began phasing in new rates for food service establishments fact sheet in Chinesebased on the volume of food waste discharged. Food service establishments can reduce rates by:
