Firehouse Recipe of the Week: Oregon Salmon Patties with Zesty Lemon Sauce

Oregon Salmon Patties 


  • 1 (14.75 ounce) pink boneless/skinless canned salmon  
  • 2 tablespoons butter
  • 1 medium onion, chopped
  • 3/4 cup cracker crumbs (divided)
  • 2 eggs, beaten
  • 1/4 cup chopped dried parsley
  • 1 teaspoon Dijon mustard
  • 3 tablespoons shortening
  • 1 large garlic clove, chopped
  • ¼ teaspoon dried dill


  1. Drain the salmon, reserving 1/4 cup of the liquid.
  2. Flake the meat.
  3. Melt butter in a large skillet over medium- high heat.
  4. Add onion and garlic; cook until tender.
  5. In a medium bowl, combine the onions and garlic with the reserved salmon liquid, half of the cracker crumbs, eggs, parsley, dill, mustard, and salmon. Mix until well blended
  6. Shape into six patties.
  7. Coat patties in remaining cracker crumbs.
  8. Refrigerate the patties until cool.
  9. Melt shortening in a large skillet over medium heat. 
  10. Cook patties until browned, then carefully turn and brown on the other side.
  11. Serve with zesty lemon sauce for salmon patties.

Zesty Lemon Sauce 


  • 2 tablespoons butter
  • 4 teaspoons all-purpose flour
  • 3/4 cup milk
  • 2 tablespoons lemon juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon cayenne pepper


  1. Melt butter in a saucepan over medium heat.
  2. Stir in the flour to form a smooth paste.
  3. Gradually stir in milk; bring to a boil over medium heat, stirring constantly.
  4. Cook for 2 minutes or until thickened.
  5. Remove from heat, and stir in lemon juice, salt, and cayenne pepper.

I have made these salmon patties many times with left over grilled or oven baked salmon. The sauce is great! Our family enjoys these very much, they are so good!
