Firehouse Recipe of the Week: Zucchini Bread

Looking for something to do with all that zucchini growing in your garden? Try this recipe courtesty of retired Firefighter Larry Harper, Engine 21.
Zucchini Bread
Add and stir together:
3 eggs, beaten
1 c. oil
2 c. sugar
1 tsp. vanilla
Peel and grate 2 cups zucchini, raw, and add to mixture above.
Add and stir the following together:
3 c. flour
1 tsp. salt
3 tsp. cinnamon
1 tsp. soda
¼ tsp. baking powder
¼ c. nuts
Add combined ingredients together and stir until well mixed. In 2 greased and floured loaf pans, pour batter and bake at 325 degrees for approximately 60 to 75 minutes.
