Cowgirl Cookies

Courtesy of Trudi Salisbury, Communications Group - Trudi reports that she used to make these cookies on nearly every shift that she worked at Station 22 (St. Johns) as a firefighter.  Enjoy!

1/2 cup sugar

1/2 cup butter

1/2 cup peanut butter

1/3 cup brown sugar

1 egg

1/2 teaspoon vanilla

1 cup flour

1/2 cup oatmeal

1 teaspoon baking soda

1/4 teaspoon salt

1 cup chocolate chips

Mix the first six ingredients in a bowl.  In a separate bowl, mix the next four ingredients and add to the first mixture.  Stir in the chocolate chips.  Drop by spoonfuls onto an ungreased cookie sheet.  Bake at 350 degrees for 8-10 minutes.
