As a green city, many Portlanders are already taking steps toward embracing sustainability. There is always more we can do, so here’s our holiday challenge for you: enjoy every moment of your meal, and save your leftovers!
You may not see the connection between savoring your meal for the days following Thanksgiving as an environmentally conscious act, but consider this: growing the food that we eat is up to two thirds of our total water footprint. The US Department of Agriculture estimates that 30 to 40 percent of food is wasted every year—which means that not only are we wasting our food, but also the resources needed to make it (like water!).
